Leek dumplings

Ingredients for 6 servings:

  • 3 tbsp butter
  • 300 g leek, finely chopped
  • 250 g bread(s) (rye bread), diced
  • 3 eggs
  • 1 dl milk
  • 8 tbsp flour
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Sauté the leek in the butter for about 5 minutes, then let it cool. Mix the bread cubes with the eggs, milk, and flour, add the cooled leek, and season with salt and pepper. Let it rest for 15 minutes. Moisten your hands repeatedly in cold water and form 12 dumplings from the mixture. Simmer the dumplings in salted water (below boiling, not boiling) for about 8 minutes, drain well, and keep warm until ready to serve.
