Vegetarian butter potatoes in the style of a butter chicken

Ingredients for 2 servings:

  • 500 ml tomatoes, pureed
  • 400 g potatoes
  • 1 bell pepper(s), red
  • 2 tbsp garam masala
  • 200 ml vegetable stock
  • 1 onion(s)
  • 1 tbsp butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the potatoes and cut into small pieces, also cut the bell peppers into small pieces, and chop the onion. Put the butter in a saucepan and fry the onions. Deglaze with the passata and vegetable stock. Add the potatoes, salt, and 2 tablespoons of garam masala to the pan. Close the lid and simmer for 15 minutes. Add the bell peppers to the pan and simmer for another 15 minutes with the lid closed. Now just season to taste. Rice can also be cooked alongside the dish.
