Turkey roulade "Cordon bleu" with risotto and fried Brussels sprouts

Ingredients for 4 servings:

  • 600 g turkey breast fillet(s)
  • 2 slices of cooked ham
  • 4 slice(s) Scheibletten (processed cheese slices)
  • Tomato paste
  • cream
  • 1 cup of risotto rice (approx. 200 – 250 ml content)
  • n. B. white wine
  • 1 onion(s)
  • 2 cup(s) vegetable broth, hot
  • Parmesan, freshly grated
  • 300 g Brussels sprouts
  • olive oil
  • nutmeg
  • Salt
  • 4 slices of bacon, optional

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

If the turkey cutlets are too thick, cut them in half crosswise. Then lay them out and flatten them slightly. Spread a mixture of tomato paste and cream on top; you can also use leftover pizzaiola from the day before. Place a slice of ham on top, followed by 1-2 slices. Roll up and secure. Sear them in a pan. Then reduce the heat, cover, and simmer for 20-30 minutes, or place them in a steamer at 95°C for 20-30 minutes. The pan juices can be deglazed with water later and used as a sauce. Meanwhile, prepare the risotto: finely chop the onions and sauté them in butter, add the risotto rice, and sauté until translucent. Deglaze with white wine, stirring constantly and adding a little more of the hot stock. Finally, season with salt and add a knob of butter and grated Parmesan cheese. (I had some “Cafe de Paris” butter left over, which added an interesting touch.) Remove the dry ends from the Brussels sprouts, clean them, and halve them so they’re easier to slice into strips. Then cut them into thin strips, max. 2 mm, but thinner if possible. They should be more like straw. Fry the strips in olive oil, turning them frequently. They should develop a nice roasted aroma. Season with freshly grated nutmeg and salt. To serve, decoratively slice the roulade and place it on the risotto. Arrange the Brussels sprouts next to it. You can also sprinkle fried bacon over the top. To do this, microwave the bacon slices for 3-4 minutes until they’re completely dry. After that, you can crumble them over the top.
