Potato and bean tagine with balsamic vinegar

Ingredients for 2 servings:

  • 6 potatoes
  • 500 g beans
  • 3 tbsp olive oil
  • some salt and pepper
  • 3 garlic cloves
  • 3 tbsp balsamic vinegar

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Fill the tagine with water and soak for at least 10 minutes. Peel and dice the potatoes. Trim and halve the beans. Add 2 tablespoons of olive oil to the tagine. Then alternate layers of potatoes and beans, seasoning each layer lightly with salt and pepper. Add a cup of water, cover, and fill the steam barrier with cold water. Sauté the vegetables over medium heat for 30 minutes. After about 20 minutes, check the amount of liquid in the tagine and add a little more water if necessary. Finely chop the garlic cloves and fry in a pan with the remaining oil. Sprinkle the garlic over the finished dish and drizzle with balsamic vinegar, if desired.
