Hand cheese in cream

Ingredients for 4 servings:

  • 2 packs of cheese (Handkäse – Harzer Roller)
  • 150 g onion(s), finely diced
  • 600 g whipped cream
  • 75 g vinegar (wine vinegar, spirit vinegar)
  • 8 g salt
  • Pepper from the mill

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Because of its ripeness, I prefer to use Handkäse that’s close to its best-before date. In a sufficiently large bowl, combine the cream with pepper, salt, and onions. Only then do I add the vinegar, as the vinegar will curdle the cream. Finally, marinate the Handkäse in the marinade. I then let it marinate in the refrigerator for a day. I serve it with fresh farmhouse bread.
