Ingredients for 4 servings:

  • 500 g wild boar meat
  • 250 ml buttermilk
  • 5 juniper berries
  • 5 peppercorns
  • 2 bay leaves
  • 2 garlic cloves
  • 1 tbsp butter
  • 2 tbsp flour
  • 125 ml red wine
  • 30 g tomato paste
  • Salt

Make a marinade with buttermilk, juniper berries, bay leaves, peppercorns, and crushed garlic cloves. Let the diced meat marinate for two days. Remove the meat from the marinade and drain. Heat the butter and brown the meat, dusting with flour and browning. Mix the red wine with tomato paste and pour over the meat. Thin with a little water, add salt, and simmer covered for about 75 minutes. If too much liquid evaporates, add a little more marinade. When the meat is nice and tender, season to taste and serve. Homemade spaetzle (noodles) go well with this dish.
