Latte Macchiato – Parfait

Ingredients for 10 servings:

  • 2 tbsp coffee powder (cappuccino powder)
  • 75 ml coffee
  • 6 eggs, 4 of which separated
  • 250 g sugar
  • 150 g yogurt (mocha)
  • 4 tbsp liqueur (coffee)
  • 400 ml cream
  • 1 tsp lemon juice
  • 1 pinch of salt
  • 6 tbsp orange juice
  • 1 vanilla pod(s), pulp
  • 150 g yogurt (cream)
  • Chocolate sauce, as decoration

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dissolve the cappuccino powder in the hot coffee, then beat it with 4 egg yolks, 2 eggs, and 100g sugar over a hot water bath until thick and creamy, just before boiling. Place the bowl in ice-cold water, stir in the mocha yogurt and liqueur, and beat the mixture until cold. Fold all but 5 tablespoons of the whipped cream into the mixture. Pour into 10 200ml glasses. Freeze for 30 minutes. Beat 4 egg whites, lemon juice, a pinch of salt, and 150g sugar over a hot water bath until stiff peaks form, until hot and glossy. Beat in ice water until cold. Stir in the orange juice and vanilla seeds. Fold in the cream yogurt and 5 tablespoons of cream, pour onto the parfait, and freeze. Decorate with the sauce before serving.
