perfect for using up leftovers

First, prepare the garlic butter; you can also do this a day in advance. Warm the butter in a bowl, add the spices and parsley, and mix everything well. Then spread it out on a piece of baking paper and roll it up. Chill the roll in the refrigerator. Peel the potatoes and boil them in lightly salted water for about 15 minutes. Cut the bell pepper, onion, and the cooked potatoes into strips or slices. Wash the meat, pat it dry, and also cut it into strips. Heat the olive oil in a large, deep pan and sear the steak strips on both sides. Season thoroughly with salt and pepper and remove from the pan. Fry the vegetables and potatoes in the same oil for about 5 minutes. Reduce the heat and, if desired, add the herb butter to the vegetables and toss to coat. Season with salt, pepper, and marjoram. Add the meat to the vegetables and let it stand for about 2 minutes. Serve in the pan.
