Pork medallions hunter style

Ingredients for 3 servings:

  • e.g. olive oil
  • 1 onion(s), chopped
  • 1 clove(s) garlic, finely chopped
  • 1 can mushrooms, drained
  • 1 pork loin(s)
  • 250 ml vegetable stock
  • 150 ml white wine
  • e.g. salt and pepper
  • 1 tsp paprika powder
  • 100 g ham (farmer’s ham)
  • 1 cup of cream, approx. 200 ml
  • 250 g cream cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Heat olive oil in a roasting pan. Sauté the onions and garlic until translucent. Add the mushrooms and sear. Sear the pork loin on all sides in the roasting pan. Deglaze everything with vegetable stock and wine. Let it simmer for about 5 minutes. Remove the pork loin and season the meat stock with salt, pepper, and paprika. Wrap the pork loin in the farmer’s ham and return it to the stock. Cook on low heat for about 30 to 45 minutes. Remove the pork loin and cut into medallions. Add the cream and cream cheese to the sauce and bring to a boil. Add the medallions to the sauce and let it cook briefly again.
