Savory potato muffins with Cabanossi

Ingredients for 1 servings:

  • 200 g jacket potatoes, cooked and cooled
  • 100 g Cabanossi
  • 80 g cheese, grated
  • 250 g flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp chili powder
  • ¾ tsp marjoram, dried
  • 2 eggs
  • 70 ml oil, neutral
  • 250 ml milk
  • Fat, for the shape

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for 12 pieces

Preheat oven to 180°C. Grease a muffin tin. Peel the potatoes and cut them into small pieces. Finely dice the Cabanossi. Mix together the flour, baking powder, salt, chili powder, marjoram, potatoes, Cabanossi, and two-thirds of the cheese. Whisk the eggs with the oil and milk and stir into the flour and potato mixture. Pour the batter into the pan. Sprinkle with the remaining cheese. Bake in the oven for 20-25 minutes. Delicious warm or cold.
