Salad made from thick green beans

Ingredients for 6 servings:

  • 400 g broad beans (green seeds)
  • 2 spring onions
  • 1 onion(s), red
  • 1 garlic clove(s)
  • 300 g cherry tomatoes
  • 2 tbsp basil, cut into fine strips
  • 200 g feta cheese
  • 2 tbsp balsamic vinegar, lighter
  • 4 tbsp grape seed oil
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

as a side dish, for grilling, for buffets

Cook the beans in salted water for 8-10 minutes until al dente. Rinse in cold water and remove the skins. Trim the spring onions and slice into rings. Peel the onion, halve it, and cut it into thin wedges. Peel and finely chop the garlic. Halve the tomatoes. Mix everything together. Whisk the dressing ingredients together well. Mix the dressing with the salad and let it marinate. Dice the feta and add it along with the basil before serving.
