Ingredients for 4 servings:

- 300 ml milk
- 300 ml water
- 2 onions
- 25 g butter
- 1 tbsp flour
- 750 g creamed spinach, frozen
- 200 g blue cheese of your choice
- 200 g ham, cooked
- Salt and pepper, nutmeg

- 150 g cheese, grated to taste, for sprinkling

very spicy with blue cheese and ham
Thaw the spinach. For the batter, put the flour in a bowl and add the eggs. First, mix with the salt and a little milk to form a smooth, mushy batter. Then gradually stir in the remaining milk and water to avoid lumps. Let it rest in the refrigerator for at least an hour. Then heat a little fat in a pan and cook about 12 pancakes. Preheat the oven to 200°C (top/bottom heat). Peel and finely chop the onions. Heat the butter in a pan. Fry the diced onions until translucent, then add the flour and sauté. Deglaze with the spinach, mix well, and return to the heat. Dice the blue cheese and melt it. Then dice the ham and stir it in. Season with salt, pepper, and nutmeg. Spread each pancake with 1-2 tablespoons of the spinach mixture and roll up. Grease a baking dish and layer the pancakes in it. Heat the butter and sauté the flour in it. Add the milk, stirring constantly, and bring back to a boil. Season with salt and pepper. Spread this sauce over the pancakes and sprinkle with grated cheese. Bake in the preheated oven for 20-25 minutes, until the cheese is golden brown.
