Stuffed potato dumplings

Ingredients for 10 servings:

  • 7 large potatoes
  • salt water
  • 4 egg yolks
  • e.g. potato flour or cornstarch
  • some salt and pepper
  • nutmeg
  • 100 g bacon (smoked bacon)
  • 1 small onion(s), red
  • 2 slices of toast
  • 1 shot of oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Great as a side dish, but also very tasty as a starter with sauce

Peel the potatoes and boil in salted water, then press them through a ricer. Stir in 4 egg yolks and season with pepper and nutmeg. Stir in potato flour (if necessary) until the mixture is no longer sticky. Form 10 dumplings. Peel and dice the onion. Dice the bacon and toast. Heat the oil in a pan, brown the bacon, onion, and toast. Make a hollow in the dumplings and add the toasted mixture. Shape the dumplings again. Let the dumplings simmer in boiling salted water (approx. 15-20 minutes). When they float to the top, they’re done. These dumplings can also be filled with other ingredients, such as red cabbage, spinach, or sauerkraut, depending on your taste. This way you always have the perfect side dish for game and roasts.
