Ingredients for 1 servings:

  • 280 g chocolate, dark, 70% cocoa
  • 130 g butter or margarine, room temperature
  • 125 g powdered sugar
  • 1 packet of vanilla sugar
  • 6 egg yolks
  • 6 egg whites
  • 275 g sugar
  • 130 g flour
  • 250 g apricot jam
  • 200 g marzipan – raw material or
  • 150 g white chocolate
  • Fat for the mold
  • Flour for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt 130g of chocolate in small pieces in a hot water bath. Beat the fat until very fluffy. Beat in the powdered sugar and vanilla sugar until the mixture is very creamy. Gradually beat in the egg yolks and chocolate. Beat the egg whites until stiff, then add 75g of sugar and pile it onto the chocolate cream. Sift the flour over the cake and mix everything loosely with a spatula. Preheat the oven to 175°C, Gas Mark 2. Grease and flour a springform pan. Smooth the batter into the pan, place it in the center of the hot oven, keep the oven door slightly ajar with a wooden spoon, and bake for about 15 minutes. Then bake the cake at 150°C (Gas Mark 1) for about 50 minutes. Let it cool. Heat the apricot jam and strain it through a sieve. Cut the base in half crosswise. Spread half of the jam on the bottom layer and assemble. Spread the remaining jam over the surface. Combine the remaining sugar with 1/8 liter of water and the remaining chocolate and bring to a rolling boil for about 5 minutes. Let the glaze cool slightly, then spread it over the cake. The bunny head: Simply download the head, enlarge it, print it out, and cut it out. For extra durability, I covered the paper with transparent adhesive film so you can probably use it more often! There are several ways to add the bunny: First option: With the marzipan. Color the marzipan with red food coloring as desired and knead it well until the marzipan is evenly colored. Then flatten the marzipan slightly and roll it out between pieces of clear plastic wrap to prevent the marzipan from sticking. Now place the stencil on top and cut out with a knife. Then place it on the glazed cake. Second option: Carefully place the Playboy Bunny on the solidified glaze (don’t press it down too hard!). Melt the white chocolate in a double boiler and cover the dark glazed cake with it. Leave the stencil free in the middle if possible, otherwise it will be difficult to remove later!
