Spaghetti with mushrooms and feta

Ingredients for 4 servings:

  • 300 g mushrooms
  • 40 g walnuts
  • 1 garlic clove(s)
  • 60 g tomatoes, dried, preserved in oil
  • 200 g feta cheese
  • 1 bunch of parsley
  • 400g spaghetti
  • salt and pepper
  • 6 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Slice the mushrooms. Roughly chop the walnuts. Finely chop the garlic. Drain and dice the tomatoes. Dice the feta. Chop the parsley. Cook the spaghetti according to the package instructions. Sauté the mushrooms in the oil for about 5 minutes. Season with salt and pepper. Add the garlic, walnuts, and tomatoes and sauté briefly. Drain the spaghetti and reserve 1/4 cup of the cooking water. Return it to the pot while still dripping wet. Add the mushrooms, parsley, feta, and cooking water and mix well. Season with salt and pepper.
