Chicken fillet in peanut sauce

Ingredients for 2 servings:

  • 1 chicken breast fillet(s)
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 tsp red curry paste
  • 1 tbsp peanut butter
  • 250 ml coconut milk
  • 1 tbsp peanuts, chopped
  • 1 tbsp butter
  • 1 tsp sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the chicken breast into bite-sized pieces and fry them in the pan. Melt the butter in a separate pan. I added a little more oil so it doesn’t burn. Add the onions and garlic to the butter and sauté. Then add the red curry paste and peanut butter. Once the peanut butter has melted, add the coconut milk and let everything simmer briefly. If you want the peanut sauce to be a little thinner, you can add a splash of milk. Now add the sugar; once it has completely dissolved, add the chicken pieces. If you want to refine the peanut sauce with chopped peanuts, you can briefly fry the chopped peanuts in a small pan and then simply mix them into the peanut sauce. Basmati rice goes perfectly with this.
