Mediterranean potatoes

Ingredients for 10 servings:

  • 1,000 g small potatoes
  • 5 cloves garlic, fresh
  • 2 sprigs rosemary
  • 2 sprigs of thyme
  • 2 sprigs of oregano
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Triplets

First, cook the potatoes in boiling water for about 10 minutes. Meanwhile, finely chop the garlic and herbs. Add the cooked potatoes to a hot pan and fry with a little olive oil. When the potatoes begin to turn light brown, add the herbs and garlic. Toss everything well and fry for a few more minutes, until the garlic is nicely browned. If you add the herbs and garlic right at the beginning, there’s a risk they’ll burn and become bitter. Finally, season with salt and pepper to taste.
