Ingredients for 2 servings:
- 1 m.-large zucchini
- 5 tomatoes
- 3 bell peppers, colored
- 400 g mushrooms
- olive oil
- Garlic
- salt and pepper
- 2 bags of rice
- 125 g crème fraîche or sour cream
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
a quick and inexpensive dish for those on a tight budget
Dice the vegetables and quarter the mushrooms. Then add everything to a pan with hot olive oil and sauté until the liquid has evaporated. Finally, add the garlic clove and season with salt and pepper. Meanwhile, cook the rice in plenty of salted water. To serve, transfer everything to a large bowl and toss with the crème fraîche. Tip: Semi-soft wheat flour can be used instead of rice.
