Spaghetti with green asparagus

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 125 g ham, diced
  • 1 red bell pepper(s)
  • ½ bunch of spring onions
  • 50 g Parmesan
  • ½ lime(s), juice
  • 5 tbsp olive oil
  • 200g spaghetti
  • salt water
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut off about 1-2 cm of the bottom of the green asparagus, wash it, and cut it into 2 cm pieces. Wash and dice the bell peppers. Lightly fry the ham cubes and then add the asparagus and bell peppers. Simmer everything over low heat for 20 minutes, stirring gently every now and then. In the meantime, mix the freshly grated Parmesan with the lime juice and olive oil. Cook the spaghetti in salted water according to the package instructions and slice the spring onions into small rings. Season the asparagus with salt and pepper, arrange it on top of the spaghetti, and drizzle with a little Parmesan dressing.
