North German potato salad

Ingredients for 2 servings:

  • 60 ml water, hot
  • ½ tsp stock powder
  • ½ onion(s), finely diced
  • 5 g salt
  • n. B. Pfeffer
  • ½ tsp sugar
  • 20 ml vinegar
  • 375 g potato(s) (salad potatoes)
  • 50 ml oil
  • 1 tsp clarified butter
  • n. B. bacon cubes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Boil the potatoes for about 20-25 minutes. Peel the potatoes and let them cool slightly. Place hot water in a bowl, mix with the bouillon powder and finely diced onion. Then mix with salt, pepper, sugar, and vinegar. Slice the cooled potatoes and toss with the dressing. Add the oil (I like olive oil) and mix everything together. The salad is already ready, but I heat up some clarified butter and fry some bacon bits in it. Add these fried bacon bits to the salad. Season to taste and adjust the seasoning if necessary. Let the salad simmer for a while. Sausages or fried eggs are delicious with it.
