Arugula salad with bacon, mushrooms and onions

Ingredients for 4 servings:

  • 500 g arugula
  • 250 g bacon, diced
  • 500 g mushrooms, white or brown
  • 5 large onions
  • olive oil
  • salt and pepper
  • Dried herbs (e.g. parsley and chives)
  • 1 handful of sunflower seeds
  • 200 g cheese, grated
  • Balsamic vinegar, light or dark

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quarter the mushrooms and slice the onions into large rings. Heat a little olive oil in a pan. Sauté the onions and bacon for 2 minutes over medium heat. Then add the mushrooms. Sauté, stirring constantly. Season with pepper, salt, and herbs. After 5 minutes, add the sunflower seeds and sauté until the mushrooms are soft. Arrange the arugula on a large, flat plate. Spread the sautéed meats over the arugula. Top with cheese and a dash of balsamic vinegar (to taste). Best served warm.
