Ingredients for 4 servings:
- 30 g butter, soft
- 8 garlic cloves, finely chopped
- 2 tsp rosemary, fresh, chopped
- 2 tsp thyme, fresh, chopped
- salt and pepper
- some lemon(s), grated peel
- 1 chicken, ready to cook (1.3 to 1.5 kg)
- 240 ml chicken broth
- 3 tbsp lemon juice
- 6 small waxy potatoes, peeled and halved
- 2 tbsp chives, rolled as garnish
- possibly crème fraîche

Slow Cooker Recipe
Mix the butter, garlic, herbs, lemon zest, salt, and pepper into a paste and rub it under the skin and all over the outside of the chicken. Don’t forget the cavity, too. Add the chicken, broth, lemon juice, and halved potatoes to the slow cooker. Cover and cook on low for 8 to 10 hours, or on high for 3.5 to 5 hours. Remove the chicken and potatoes from the cooking liquid (careful—they’ll fall apart easily!) and serve sprinkled with chives. If you like, you can make a sauce from the cooking liquid, thickening it slightly or reducing it and then adding crème fraîche. Peas make a particularly good side dish.
