Lamb's lettuce with fried goat's cheese

Ingredients for 2 servings:

  • 100 g lamb’s lettuce
  • 250 g cocktail tomatoes
  • ½ cucumber(s)
  • 1 tsp mustard, medium hot
  • 1 tsp honey
  • 2 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • salt and pepper
  • 200 g goat’s cheese slices
  • Flour
  • 1 egg(s)
  • Breadcrumbs
  • 1 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Clean and wash the lamb’s lettuce. Halve the tomatoes. Quarter the cucumber lengthwise and cut into pieces. Place the lettuce, tomatoes, and cucumber in a bowl. Make a dressing from mustard, honey, vinegar, and olive oil. Season with salt and pepper and drizzle over the salad. Divide the salad between 2 plates. Coat the goat’s cheese first in flour, then in beaten egg, and finally in breadcrumbs, pressing them down lightly. Briefly fry the breaded goat’s cheese slices in olive oil over medium heat until crispy and drain on kitchen paper. Then arrange on top of the salad. Serve with fresh baguette.
