Ingredients for 3 servings:

  • 500 g marrow bones
  • 1 roll
  • Water for soaking
  • 2 sprigs of parsley
  • 200 g breadcrumbs, approx.
  • 2 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Scrape the marrow from the bone and melt it slowly in a saucepan, then let it cool. Meanwhile, soak the bread roll in water and squeeze it dry again. Wash and finely chop the parsley. Purée the marrow with a hand blender and mix it with the bread roll, eggs, and parsley. Gradually add the breadcrumbs. Depending on the amount of bone marrow and the size of the eggs, you may need more or less breadcrumbs. Using wet hands, form the now firm mixture into dumplings. Add these dumplings to hot broth or soup and let stand for 10 minutes. Do not boil!
