Spaghetti with shrimp

Ingredients for 2 servings:

  • 300g spaghetti
  • 150 g shrimp(s)
  • 150 g cream cheese
  • 200 ml cream or milk
  • 1 bunch of spring onions
  • 1 organic lemon(s)
  • 250 ml vegetable stock
  • 2 tbsp olive oil
  • 1 tsp flour
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the spaghetti in plenty of salted water. Wash and squeeze the lemon. Peel and slice the spring onions. Sauté the white rings in olive oil, dust with flour, and deglaze with lemon juice and vegetable stock. Stir in the cream cheese and cream or milk. Season the sauce with salt and a generous amount of pepper. Stir in the shrimp and let it simmer in the sauce. Serve the dish with the green parts of the spring onions. If you like, peel off some lemon zest and sprinkle it over the dish for garnish.
