Peach cake from the pan

Ingredients for 1 servings:

  • 150 g flour
  • 2 tsp baking powder
  • ½ tsp ginger
  • 100 g sugar
  • ¼ tsp salt
  • 250 ml soy milk (soy drink)
  • 1 tsp lemon(s), grated peel
  • 600 g peach(s), pitted, cut into wedges
  • 25 g brown sugar
  • 2 tbsp water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grease a 25 cm cast-iron skillet with oil. Heat the brown sugar and water, stirring constantly, until the mixture caramelizes slightly. Add the peaches and remove from the heat. Combine the flour, baking powder, ginger, sugar, salt, and lemon zest. Quickly stir in the soy milk and pour over the peaches. Place the skillet in the oven and bake at 175°C for 30-40 minutes. Let cool for about 20 minutes, then turn out onto a large plate.
