Ingredients for 1 servings:

  • 400 ml milk
  • 1 cube of yeast
  • 600 g flour
  • 1 tbsp salt
  • 500 ml water
  • 3 tbsp baking soda
  • e.g. poppy seeds, sesame, coarse salt, grains, cheese or other to sprinkle on

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

for approx. 30 small pretzel rolls

Warm the milk to lukewarm and dissolve the yeast in it. Then add the flour and salt and knead everything into a smooth dough. Place the dough in a bowl, cover with a cloth, and let it rise in a warm place for at least 30 minutes. Form the dough into a long log and cut into about 30 pieces. Then shape each piece into a roll. Dissolve the baking soda in the water and bring to a boil. Be careful, it will foam a lot! Dip the balls one at a time for about 45 seconds, then remove with a slotted spoon and place on a baking sheet lined with baking paper. Sprinkle the pretzel rolls as desired and bake at 200°C for 10-15 minutes.
