Ingredients for 1 servings:

  • 1 turkey schnitzel (approx. 120 g)
  • salt and pepper
  • 1 shallot(s)
  • 1 tsp vegetable oil
  • 1 bell pepper(s), green
  • 2 beefsteak tomatoes
  • 50 ml vegetable stock
  • 100 ml tomato juice
  • ¼ bunch chives
  • 80 g brown rice, already cooked
  • Paprika powder
  • 1 bell pepper(s), red

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the turkey schnitzel with salt, pepper, and paprika. Peel and dice the shallot. Heat the oil in a non-stick pan and fry the schnitzel on both sides until crispy. Remove and keep warm. Sauté the diced shallots in the remaining fat. Trim the bell peppers and cut into fine strips. Pour boiling water over the tomatoes, peel, deseed, and dice them, and add both. Pour in the vegetable stock and tomato juice and sauté everything for about 10 minutes. Stir in the tomato paste and season everything with salt, pepper, and paprika. Finely slice the chives and scatter them over the pan. Arrange the turkey schnitzel on a plate with the bell peppers and brown rice and serve.
