Ingredients for 2 servings:
- 400 g minced meat, mixed
- 1 tbsp breadcrumbs
- 30 g fried onions
- 50 g diced ham
- 1 tbsp tomato paste
- 1 egg(s)
- salt and pepper
- 100 g cherry peppers, filled with cream cheese
- 250 g boiled potatoes from the previous day, barely cooked
- 200 g cherry tomatoes
- 12 olives, as desired
- 2 tbsp maple syrup
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
Knead the minced meat with breadcrumbs, fried onions, 25g diced ham, tomato paste, egg, salt, and pepper, and season to taste. Form into a rectangle approximately 15 x 20 cm on a piece of cling film. Place the cherry peppers in a row in the center. Using the film, fold one side of the mixture over the cherry peppers and form the whole thing into a roll, pressing down firmly. Place the roll in a greased baking dish. Roughly dice the potatoes, season with salt, and spread them on one side of the roast. Wash the tomatoes and spread them on the other side. Spread the olives on both sides. Roast in the oven at 180°C with fan/convection for approximately 20 minutes. Then sprinkle the roast with the remaining diced ham, drizzle with the syrup, and cook for another 10 minutes. If necessary, brown under the grill for a few minutes at 220 °C.
