Ingredients for 1 servings:

  • 1 pack of puff pastry
  • 1 pack of feta cheese
  • 2 stalk(s) leeks, depending on size
  • 200 g tomatoes
  • 1 egg(s)
  • 100 ml cream
  • 100 ml milk
  • salt and pepper
  • Paprika powder, sweet
  • Oil, for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

with sheep’s cheese

Wash the leek, halve it, and cut it into strips. Sauté it in a little oil for about 5 minutes. Line a quiche dish with the puff pastry, prick the base several times with a fork, and then add the sautéed leek. Whisk the egg with the cream and milk, season with salt, pepper, and paprika, and pour it over the leek. Slice the tomatoes and arrange them on top. Tear the feta into pieces or cut it into small cubes and scatter them on top. Place the quiche in a preheated oven (160 degrees fan-assisted) and bake for about 30 minutes. If you want it a little crispier, increase the baking time accordingly. Tip: You could also fry diced ham or bacon with the leek and mix it in; it also tastes delicious.
