Ingredients for 4 servings:

  • 1 onion(s)
  • 15 g butter
  • 400 g ham sausage, smoked or beer sausage
  • 400 g spelt flour type 630
  • 4 eggs
  • 2 tbsp parsley
  • 100 ml water, maybe a little more
  • salt and pepper
  • 1 pinch(s) nutmeg
  • 1 ½ liters vegetable broth

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Dice the onion and sauté in butter. Dice the sausage into small cubes. Chop the parsley. Make a dough from all ingredients except the broth. Heat the vegetable broth. Separately, bring water with a little salt to a boil in a large pot. Use a tablespoon to scoop out larger dumplings from the dough and add them to the boiling water. Simmer until the dumplings float to the top. Skim the dumplings, add them to the prepared vegetable broth, and serve.
