Wild garlic sauce

Ingredients for 1 servings:

  • 1 bunch wild garlic, fresh
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1 small onion(s)
  • 1 tbsp, heaped butter
  • 1 tbsp, heaped flour
  • ½ lemon(s)
  • 200 g sour cream
  • 100 ml water
  • 50 ml milk
  • 1 tbsp mustard
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Roughly chop the wild garlic and remove the stems. Finely chop the wild garlic in a food processor along with the chopped garlic and olive oil. Finely dice the onion and melt it in the butter until translucent. Add the flour, stir briefly, and then stir into a roux with the boiling water. Thin the roux slightly with the milk if necessary and stir in the cup of sour cream. Add the juice of half a lemon and the mustard, and season with salt and freshly ground pepper. Now fold in the wild garlic and garlic mixture and bring the sauce back to a gentle boil. Done! Delicious with fish, boiled potatoes, pasta, rice, or hard-boiled eggs.
