Rhubarb juice from the steam juicer

Ingredients for 1 servings:

  • 4 kg rhubarb
  • 200 g sugar
  • 2 pieces star anise

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Mixed with water, a sparkling refreshing drink

Remove the leaves from the rhubarb, wash them, and cut them into very fine slices. Place the pieces in a juicer, sprinkle with sugar, and add the star anise. Fill the water container to the brim with water, place the fruit container on top, and simmer vigorously with the lid closed for about an hour. Immediately pour the boiling-hot juice into 14 small 200 ml screw-top bottles, such as piccolo bottles, and seal with a plastic screw cap. Enjoy the juice diluted with water. Tip: Collect piccolo bottles and plastic caps from mineral water bottles throughout the year.
