Ingredients for 1 servings:

  • 10 eggs
  • 200 g sugar, with vanilla flavor
  • 2 packets of vanilla sugar, optional
  • 1 pinch of salt
  • 220 g flour
  • 2 packets of vanilla pudding powder
  • ½ lemon(s), zest only
  • 1 port. Cream, (coconut butter cream)
  • ½ jar jam (forest fruit jam)
  • 600 g fondant, white
  • n. B. Food coloring, purple, green, pink, yellow or your choice

Instructions

Working time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 40 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form, gradually adding the sugar. Gradually stir in the egg yolks. Also stir in the lemon zest. Mix the flour with the pudding powder and fold in. Then pour the batter into a greased book pan (37 x 26 cm). I spray the pan with baking spray, cut a piece of baking paper the size of the base, and place it in the pan. Bake in a preheated oven at 180°C (top/bottom heat) for approx. 35-40 minutes. Turn out onto a wire rack, remove the baking paper if necessary, and let the base cool. Cut the cooled base in half horizontally. Set aside approx. 1 cup of the buttercream. Spread half of the remaining buttercream on the base and spread half of the jam over it. Place the second layer on top. Spread the cream and jam over it as well. Place the top cake layer on top. Spread with the reserved buttercream to even out any unevenness. Roll out 500g of fondant very thinly, slightly larger than the cake, and cover the cake with it. Press it down evenly. Color half of the remaining fondant purple. Color the remaining fondant for the leaves and flowers green, pink, yellow, or any color you like. Roll out the purple fondant thinly and cut out oval shapes for the cake edges, as well as numbers and letters. Use the other fondant to create flowers and leaves, for example. Press the purple motifs onto the edge, overlapping them. Otherwise, decorate the cake as you wish. Note: You can find a recipe for coconut buttercream in my profile. It is sufficient for this cake.
