Ingredients for 1 servings:

  • 50 g butter, soft
  • 1 egg(s)
  • 1 pinch of salt
  • 2 tbsp cocoa powder
  • 100 ml milk
  • 125 g flour
  • 1 tsp baking powder
  • Butter for the mold
  • 2 egg yolks
  • 1 egg(s)
  • 75 g sugar
  • 4 sheets of white gelatin
  • 250 g white chocolate coating
  • 600 g cream
  • 500 g strawberries or other berries

Instructions

Working time approx. 40 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 40 minutes

For the base, cream the butter until fluffy. Add the sugar, salt, and egg to the butter and continue beating. Add the cocoa powder, flour, baking powder, and milk. Pour the mixture into a deep, buttered dish. Bake in a preheated oven at 180°C (convection oven) for approximately 15-20 minutes (test with a skewer). For the mousse, beat the egg yolks, egg, and sugar until fluffy. Soften the gelatin, squeeze out the excess water, dissolve it, and stir into the mixture. During this time, melt the chocolate coating (in the microwave or in a double boiler) and stir it into the mixture. Leave to cool until it begins to set. Whip the cream, then gradually fold it into the cooled mixture. Clean the strawberries, chop them if desired, and spread them on the base. Spread the mousse on top. Chill overnight is best. You can also turn the whole thing around, with a light base and a dark mousse.
