Tina's carrot and kohlrabi vegetables

Ingredients for 3 servings:

  • 4 medium-sized carrots
  • 1 m.-large kohlrabi
  • 250 ml coconut milk
  • some salt and pepper
  • Ginger powder
  • curry powder
  • chili powder
  • Vegetable broth, instant
  • some water, to taste
  • some sunflower oil or wok oil
  • 200 g rice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean, peel, and finely dice the carrots and kohlrabi. Heat the oil in a suitable pot and sauté the vegetables. Pour in the coconut milk and add a little water. Otherwise, the mixture will be too mushy. Lightly season the vegetables. Meanwhile, cook the rice according to the package instructions. Stir the vegetables frequently to ensure none sticks to the bottom of the pot. Just before the end of the cooking time, season again generously until the mixture is just right (according to your taste). Serve with the rice.
