Gnocchi with wild garlic pesto

Ingredients for 2 servings:

  • 30 g pine nuts
  • 100 g wild garlic, fresh
  • 30 g Parmesan, grated
  • 6 tbsp olive oil
  • some salt and pepper
  • 400 g gnocchi, from the fresh pack

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Ready in less than 30 minutes

Toast the pine nuts in a pan without fat and then let cool. Wash the wild garlic, pat dry, and finely chop. Finely chop 20g of pine nuts. Place the wild garlic, pine nuts, 10g of Parmesan cheese, and the olive oil in a bowl, season with salt and pepper, and puree thoroughly with a hand blender. Add a little more salt and pepper if desired. Cook the gnocchi in plenty of boiling salted water according to the package instructions and then drain. Immediately toss the gnocchi with the pesto while still hot. Sprinkle with the remaining Parmesan cheese and pine nuts and serve.
