Ingredients for 4 servings:
- 4 goose legs
- salt and pepper
- 4 tbsp oil
- 300 g onion(s)
- 2 apples
- 1 orange(s)
- 1 piece(s) ginger root
- 250 g plum(s), dried
- 200 ml chicken stock
- 250 ml dry white wine
- 2 tbsp honey
- Coriander powder
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes
Preheat oven to 180 degrees Celsius. Rinse goose legs, pat dry, and season. Sear in hot oil in a roasting pan for 5 minutes on each side, then remove. Peel and roughly chop the onions, apples, and orange, then add to the roasting pan. Peel and grate the ginger, add it along with the plums, and fry. Pour in the stock, wine, and 250 ml of water. Return the legs to the pan, cover, and cook in the oven for about 35 minutes. Remove the meat and keep warm. Remove some of the onion, apple, and plum pieces. Purée the rest, strain, and add the pieces back in. Season the sauce with honey, salt, pepper, and coriander. Serve the legs with the sauce, garnishing if desired. Gnocchi go well with this.
