Broccoli fish in coconut broth with mushrooms

Ingredients for 4 servings:

  • 250 g fish fillet(s), frozen, thawed, e.g. cod or pollock
  • 1 tsp soy sauce, light
  • 1 tbsp red curry paste
  • 2 tbsp vegetable oil
  • 750 ml vegetable stock
  • 250 ml coconut milk
  • 250 g broccoli
  • 1 small onion(s)
  • 250 g mushrooms
  • ½ tsp paprika powder
  • black pepper
  • coriander

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Drizzle the fish fillet with soy sauce and season with pepper. Stir-fry the curry paste in hot oil in a saucepan for 1 minute. Pour in the vegetable stock and coconut milk and bring to a boil. Reduce heat and add the broccoli, onions, and mushrooms. Let simmer for 5 to 8 minutes. Then add the fish strips and cook for 3 to 4 minutes. Season with paprika and pepper, if desired, and sprinkle with coriander.
