Colorful pasta with apples

Ingredients for 2 servings:

  • 2 small zucchini, 250 g
  • ½ bell pepper(s), red
  • 1 tomato(s)
  • 1 onion(s), finely diced
  • 1 apple
  • 4 tbsp rapeseed oil
  • 250 g pasta of your choice
  • Salt and pepper from the mill
  • 1 tbsp parsley, finely chopped
  • 1 tbsp fresh basil, finely chopped
  • 1 sprig of basil for garnishing

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Cut the zucchini into pieces and the bell pepper into cubes. Cut the tomato and apple into wedges. Heat 1 tablespoon of oil, sauté the apple slices and the vegetables, except for 1/3 of the diced bell pepper for garnish. Add the remaining oil and simmer gently for 8-10 minutes. Cook the pasta according to the package instructions. Drain, reserve 50 ml of the pasta water and add it to the pan with the vegetables. Add the finely chopped basil and parsley to the pan with the apple and vegetables. Season with salt and pepper. Toss the pasta with the vegetables and serve on plates. Sprinkle with the reserved diced bell pepper and garnish with basil.
