Ingredients for 1 servings:
- 150 g pasta
- ½ avocado(s)
- 2 goat’s cheese slices
- 3 tbsp olive oil
- 3 tbsp water, from the pasta
- salt and pepper
- Herbs, dried
- 2 handfuls of pine nuts
- Parmesan

vegetarian, super easy and quick
Cook the pasta in boiling salted water according to the package instructions. Place the avocado flesh in a tall bowl with the goat’s cheese, oil, salt, and pepper and blend with an immersion blender until smooth. Before draining the pasta, reserve 3 tablespoons of the water, add it to the pesto in the bowl, and stir in. Transfer the pasta to a plate. Spread the pesto on top and garnish with herbs, Parmesan cheese, and toasted pine nuts, if desired.
