Brussels sprouts in apple curry cream

Ingredients for 4 servings:

  • 1 kg Brussels sprouts
  • Water (salt water)
  • 2 onions
  • 2 m.-large carrot(s)
  • 3 tbsp margarine
  • 4 tsp flour
  • 4 tsp curry powder
  • salt and pepper
  • ½ liter vegetable broth
  • 1 pack of cream (soy cream)
  • 2 apples

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim the Brussels sprouts, make a cross-shaped incision on the stem, and cook in boiling salted water for about 15 minutes. Peel and dice the onions and carrots. Melt the margarine in a saucepan and sauté the onions and carrots until soft. Dust with flour and brown while stirring with the curry powder. Pour in the broth, stirring vigorously. Season with salt and pepper and add the soy cream. Bring to a boil. Peel and dice the apples. Drain the cooked Brussels sprouts, add them to the curry sauce with the apple pieces, and bring back to a boil briefly. Serve with rice or potatoes.
