Penne in paprika cream sauce with zucchini and Parmesan

Ingredients for 2 servings:

  • 250g penne
  • 1 tbsp olive oil
  • 1 m.-large onion(s), red
  • 1 m.-large zucchini
  • 1 tsp, leveled vegetable broth, instant
  • 1 cup of cream
  • 2 tsp, heaped Ajvar
  • 1 tbsp Parmesan, grated
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Bring 500ml of water to a boil with a pinch of salt. Add the pasta and cook according to the package instructions. Meanwhile, heat the oil in a small saucepan. Finely chop the onion and sweat in the hot oil until translucent. Wash the zucchini and cut it into small cubes. Add it to the pan with the onions and fry briefly. Then add the cream and stir in the vegetable stock. Simmer gently for about 5 minutes, until the zucchini is soft. Finally, add the Parmesan cheese and ajvar paste and mix well.
