Sausage goulash with cheese

Ingredients for 4 servings:

  • 500 g potatoes
  • 500 g carrot(s)
  • 500 g sausages
  • 1 liter vegetable broth
  • 200 ml cream
  • 2 m.-sized onion(s)
  • 2 tbsp, heaped flour
  • 1 tbsp, heaped tomato paste
  • Oil or vegetable fat
  • Cheese, grated
  • Salt
  • Parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel the potatoes and carrots and cut into large cubes. Boil in salted water for 10 minutes. Meanwhile, slice the sausages and finely dice the onions. Add oil or vegetable fat to a large pot and fry the sausages, adding the onions after a few minutes. Drain the potatoes and carrots and reserve the vegetable stock. If not, use other vegetable stock. Reduce the heat in the pot with the sausages slightly. Add tomato paste to the sausages and stir well, then immediately add the flour and stir. Now deglaze with the vegetable stock and whisk until smooth. Add cream and season with salt. Add the potatoes, carrots, and parsley. Finally, stir in grated cheese, adjusting the amount to your liking.
