Pork strips in peach ragout

Ingredients for 4 servings:

  • 500 g pork (shredded)
  • 2 tbsp oil
  • 1 tbsp curry powder
  • 1 onion(s)
  • 2 cloves garlic
  • 3 tbsp soy sauce
  • 2 tsp sambal oelek
  • 1 tbsp broth, granulated
  • 1 tbsp tomato paste
  • 1 can peach(s)

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Rinse the meat, pat dry, and place in a bowl. Mix together 2 tablespoons of oil, 3 tablespoons of soy sauce, sambal oelek, salt, and curry powder and marinate the meat. Set aside and let stand for at least 30 minutes. For the peach ragout, drain the peaches, reserving the juice and pouring it into a saucepan. Cut the peaches into small pieces. Add 1 tablespoon of soy sauce, 1 teaspoon of sambal oelek, and 1 tablespoon of tomato paste to the juice and bring to a boil while stirring. Add 1 tablespoon of granulated stock and the finely chopped peach pieces. Let the whole thing simmer gently over low heat. Dice the onion and garlic and fry in a pan with a little oil. Add the marinated meat and fry. Add the peach ragout and let everything simmer for about 10 minutes. We like to eat this dish with basmati rice.
