Oatmeal cupcakes

Ingredients for 1 servings:

  • 2 bananas
  • 100 g honey
  • 125 g oat flakes, wholegrain
  • 250 g natural yogurt
  • 125 g berries, e.g. currants, blueberries, raspberries, etc.
  • 1 tsp cinnamon
  • e.g. chocolate sauce or strawberry sauce for garnishing

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Mash the bananas with a fork until no lumps remain. Add the honey and mix well. Combine the oats and cinnamon in a separate bowl, then add the banana-honey mixture. Mix well and spoon two tablespoons of the batter into each muffin tin. Make a well in the center. Bake for 10-12 minutes at 175°C (top/bottom heat). Remove the cupcakes from the tin and place them on a plate. Spoon 2 tablespoons of natural yogurt into each well and smooth the surface. Finally, scatter the berries evenly over the cupcakes. Garnish with chocolate sauce, for example, if desired.
