Pumpkin soup with applesauce and ham cubes

Ingredients for 6 servings:

  • 6 potatoes
  • 4 carrots
  • 1 small pumpkin(s) (Hokkaido)
  • 1 jar applesauce
  • 2 tbsp broth, granulated
  • salt and pepper
  • Ham, diced
  • Herbs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

very easy and quick

Quarter the pumpkin, remove the seeds and soft inside, and then peel it. Peel and chop the potatoes and carrots. Place everything in a pot with about 2 tablespoons of granulated broth and enough water to cover the vegetables, and cook until everything is tender. Then either puree the soup (I find this too fine) or mash it with a potato masher so that the soup thickens but still has small pieces in it. Mix 1/2 jar of applesauce into the soup, season with salt and pepper. Add a little more applesauce, if desired. Finally, stir in the diced ham and herbs and heat briefly again. We all love this version of pumpkin soup, and even my 3-year-old son can’t get enough of it.
