Ingredients for 3 servings:

  • 130 g flour
  • 2 eggs
  • 125 ml milk
  • 2 tsp fish seasoning (fried fish seasoning)
  • ¼ tsp salt
  • 600 g fish fillet(s), e.g. pollock, redfish or cod
  • Fat for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Separate the eggs. Mix the flour with the two egg yolks, the milk, the fish seasoning, and the salt, and let the batter rest for 10-15 minutes. In the meantime, cut the fish into slices. It’s important that the fish is dry before placing it in the batter! Pat it dry with a paper towel. After the resting time, beat the egg whites until stiff peaks form and carefully fold the beaten egg whites into the batter. Coat the fish in the flour and fry in a pan or deep fryer. Boiled potatoes or French fries go well as a side dish. I also recommend a delicious dill sauce or remoulade.
