Ingredients for 2 servings:
- 3 handfuls of Romanesco (10 large florets)
- 1 shallot(s)
- ½ bell pepper(s), red
- 2 tbsp Greek yogurt (10%)
- 1 tbsp vinegar
- 1 tbsp walnut oil
- 1 tsp mustard, medium hot
- 1 tbsp milk approx.
- salt and pepper
- Sugar, optional
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Finely chop the Romanesco (you can also do this in a food processor). Wash, deseed, and dice the bell pepper. Peel and dice the shallot. Place the vegetables in a bowl. Mix the dressing together and season to taste. You can use more milk or more mustard if desired. Mix the dressing with the vegetables. The salad can be served fresh or marinated.
