Greek-inspired Kritharaki salad

Ingredients for 6 servings:

  • 500 g Kritharaki (rice-shaped noodles)
  • 2 bell peppers, red
  • 200 g feta cheese or shepherd’s cheese
  • ½ jar tomatoes, dried in oil
  • 2 tbsp olive oil
  • 2 tbsp walnut vinegar
  • n. B. Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

simple and quick, light pasta salad alternative, good with grilled food

Cook the pasta al dente. Meanwhile, finely dice/chunk the bell peppers, feta cheese, and sun-dried tomatoes and mix them in a bowl. Add the drained pasta and mix. Add walnut vinegar (about 2 tablespoons), olive oil, and salt to taste. Optionally, you can also add olives, pine nuts, etc. Feel free to get creative here.
